The latest Ubuntu 11.10 VMware image comes out of the box with the Unity desktop manager. Alternatively there can be the Gnome Shell installed. Look here for some more info about other VMware images, the installation of VMware Tools and Gnome Shell vs Unity and their installation issues into VMware appliances.
